How to make an outdoor cocktail hour simple, elegant and inexpensive?

We are having an outdoor wedding ceremony this summer. The reception is at a differently location two hours after the ceremony. Instead of having a cocktail hour at the reception hall before dinner (which we can't afford) we are having a little punch and appetizer event at the ceremony site while we are off getting our photos done.

I want some ideas for appetizers that are simple, elegant and won't spoil in the heat. And maybe ideas for how to display the food creatively.|||cheese, fruit and cracker platter. Those can be arranged easily and very simple. If you make the platter yourselve you can pick out from nice cheeses and fruit and it will save you a lot of money.

Another idea, is nice pita chip and a spinach dip. You get some plastic trays from any party supply store that you can display on the food on. The even have a silver finish tray that looks really nice but is really plastic.
